While this recipe isn't new to me, it certainly applies in my quest to make 5 vegetarian meals. H actually suggested this recipe after we had some carrots and celery left over from that vegetarian chili I made last week.

While chopping all the veggies is time consuming, it is well worth it. I had this recipe a lot growing up, and it never failed to be a crowd pleaser. I'm really happy that H also appreciates this recipe.

Since this isn't a warm recipe, it works really great in summer. Also veggies are usually cheaper in summer.

Once again, the link to my food blog has the recipe.

I found this recipe in Kraft's magazine that I get. At first I thought it just looked good for a cold night. When I realized that it didn't include meat, I was stoked to have found another vegetarian recipe! Just had to substitute vegetarian vegetable broth for the chicken broth, and I was in business.

This was a hearty vegetable soup. It's so easy to make and really tastes good. I plan to make this again!

I included the link to my post in my food blog, instead of posting it both places.

I saw this recipe on Rachel Ray's 30 Minute Meals. I actually watched an episode. Some of her stuff has just gotten so strange and out there that I don't often watch her anymore. I saw her make this, and knew I wanted it to be my first vegetarian meal. H and I like spinach and artichoke dip, so figured we would like this. We also love pasta dishes, so that was another bonus for this meal.

Overall it was great, and a good intro to vegetarian meals. Hopefully my other 4 tries will be as successful.

If anyone has a vegetarian recipe that they think I should try let me know. I consider H and I to be kind of adventurous in eating, but no tofu!
